Meal Plan #54

Happy Sunday!

If you’re wondering what you should plan for dinners this coming week, I’ve got you covered with 5 delicious meat-free meals that everyone will love!

NOTE FOR THIS WEEK: I included several simple meals that aren’t complete. Meaning, they need a side dish. For example, I put the chickpea tacos for Tuesday but you’ll likely want to pick a rice dish or some veggies to serve with that 🙂

Meal Prep Tips:

I like to do my grocery shopping on the same day that I meal prep or else some things will get lost in the abyss that is my fridge.

Make it ahead = tips to cook/ meal prep the recipe ahead of time.

Component prep = ideas for dicing veggies etc to make weeknight meals fast and easy!

Sesame Tofu

Make it ahead: Keeps for up to 4 days – reheat in a skillet or air fryer to bring back the crispy edges. The sauce can separate slightly in the fridge but comes right back together when reheated. Store rice separately if meal prepping.

Component prep: Whisk together the sesame sauce and store in a jar in the fridge. Press and tear the tofu the night before and store uncovered on a paper towel-lined plate for maximum crispiness.

Chickpea Tacos

Make it ahead: The chickpea filling keeps for up to 4 days and reheats perfectly in a skillet with a splash of water. Night of, it’s just warming tortillas and setting out toppings – under 5 minutes.

Component prep: Measure out all the spices into a small bowl so they’re ready to dump in at once. Prep any toppings (dice red onion, slice avocado, chop cilantro) and store separately.

Tortellini Soup

Make it ahead: Keeps for up to 3 days in the fridge. It thickens significantly as it sits – add a generous splash of broth when reheating and stir well to bring it back together. Add fresh spinach when reheating rather than storing it in the soup.

Component prep: Dice the onion and mince the garlic ahead. Day of, the whole thing comes together in 30 minutes with one pot.

Soy Peanut Noodles

Make it ahead: Best fresh since the noodles absorb all the sauce as they sit. Leftovers reheat well with a splash of water or soy sauce to loosen the sauce back up.

Component prep: Whisk together the peanut sauce (peanut butter, sesame oil, neutral oil, rice vinegar, honey, soy sauce, garlic, ginger) and store in a jar – this takes 5 minutes and makes dinner truly instant. Chop the green onions and cilantro ahead.

Vegetarian Baked Ziti

Make it ahead: Fully assemble (without baking), cover tightly, and refrigerate up to 24 hours before baking. Add 5 extra minutes to the covered bake time if going straight from the fridge. Leftovers keep for up to 4 days and reheat great.

Component prep: Mix together the ricotta mixture (ricotta, egg, half the parmesan, half the mozzarella) and store covered in the fridge. Dice the onion and mince the garlic. Day of, it’s just making the sauce, assembling, and baking.
