THE RETURN OF ANCESTRAL INGREDIENTS
Two standout predictions—the Tallow Takeover and the Focus on Fiber—suggest consumers are moving away from novelty toward credibility in their food choices. Beef tallow, an ancestral cooking fat, is experiencing a renaissance driven by its flavor profile and sustainability credentials. The ingredient has already entered mainstream consciousness, with Steak ‘n Shake prominently advertising its tallow fries on billboards nationwide.
Meanwhile, fiber is emerging as “the new protein,” championed for its gut health and nutritional balance benefits, signaling a shift toward science-backed functional nutrition over exotic superfood claims.
GENDER EQUITY TAKES CENTER STAGE
The report designates 2026 as the Year of the Female Farmer, spotlighting women driving agriculture and aquaculture globally, in alignment with the United Nations’ International Year of the Woman Farmer.
Whole Foods frames gender equity in the supply chain not as an ESG checkbox, but as a competitive differentiator that resonates with consumers at the shelf level.

Both trends point to consumer demand for convenience without compromise and present opportunities for grocers to rethink center-store merchandising through a premium lens. Additional movements include a vinegar renaissance and a “mindful sweet” revolution, underscoring the convergence of functional ingredients and clean indulgence.
