Greek Yogurt Bars (Frozen and so easy!)

This Greek Yogurt Bars recipe is my go-to frozen treat/ snack once the weather heats up – creamy, protein-packed, and dipped in a delicious chocolate shell. They come together in just 10 minutes of active time and are so GOOD!

I first shared these yogurt bars on social media last year and they blew up way more than I expected! SO, I knew that they needed a proper spot on my blog. I make a batch of these at least once a month, especially during the summer because the whole family loves these!

Just 10 minutes of prep time – the freezer does most of the work!

Protein-packed treat – Greek yogurt makes these bars more filling and protein-packed than a typical frozen treat. Overall a great high protein snack!

Use any yogurt you have – I’ve made these with Greek, regular yogurt, and even a non-dairy yogurt and they always turn out great!

That chocolate shell! – dipping them in melted chocolate gives a satisfying crack and taste with every bite.

Simple ingredients needed

The wholesome ingredients for this yogurt bar recipe are listed fully down in the recipe card but let’s briefly go over the pantry staples needed including a few substitutions you can make as desired!

Plain Greek yogurt (or yogurt of choice) – I typically use full-fat Greek yogurt for the protein boost, however, regular or dairy-free yogurts (such as coconut yogurt) will work well too.

Natural peanut butter – natural, runny peanut butter blends in the smoothest. The drippy kind works best here but use what you have. Almond butter or sunflower seed butter would also work well!

Chocolate chips – regular or mini work well. I kind of prefer mini chocolate chips in this recipe but whatever you have works. OR, you can leave them out altogether.

Nuts – the chopped peanuts are optional, but a nice bit of crunch! You can use any nuts you’d like.

Dark chocolate chips or chunks – this is melted for the outer coating. Dark chocolate is highly suggested as it melts better and thinner. Milk chocolate or white chocoalte will end up pretty thick.

Coconut oil – this thins out the melted chocolate so it coats smoothly and hardens with a nice snap!

Optional for a touch of sweetness – as desired, you can add in a little maple syrup or a touch of honey.

Popsicle sticks

Optional mix-ins – fresh fruit mixed in a sprinkled on top, protein powder for more protein, and chia seeds are all great mix-ins.

How to Make It

Just a reminder that you can find the FULL written recipe down in the recipe card, but I want to quickly go over how to make them with visuals for you 🙂

Add all of the ingredients in a large bowl to make the Greek yogurt base.

Mix thoroughly until everything is fully combined and creamy.

Line a large baking tray with parchment paper. Spoon the Greek yogurt mixture into 4 or 6 round disks and top with chopped nuts (if using). Place a popsicle stick into the yogurt. Freeze until sold, a few hours.

In a medium bowl, combine the chocolate chips and coconut oil. Melt in 30 second increments, stirring in between, until everything is melted.

Dip the frozen yogurt bars in the chocolate.

You can dip them halfway for a lighter treat or fully cover the bars in the chocolate. Place back on the baking sheet and chill until chocolate is hardened, just a few minutes. Store in an airtight container.

Recipe Tips

Use runny peanut butter – Natural, drippy peanut butter offers the creamiest texture + works best since it blends into the yogurt smoothly compared to something like Jif.

Work quickly when dipping in the chocolate – the melted chocolate hardens FAST once it hits the cold yogurt bars so act quickly!

Any yogurt works well – Greek yogurt gives the most protein in this recipe, BUT regular yogurt or dairy free yogurt are great substitutes if that’s what you want/ have.

Don’t skip the full freeze time – they need at least 2 hours in the freezer to firm up enough to dip cleanly.

Can I use regular yogurt instead of Greek yogurt?

Can I make these vegan?

Absolutely! swap in a vegan yogurt and make sure that your chocolate chips are vegan as well.

Ingredients

1 cup yogurt of choice I used greek yogurt but really any kind works well including vegan yogurt cup peanut butter I find that the natural, runny kind works best¼ cup chocolate chips I used regular but I think mini chocolate chips would be betterhandful of nuts optional (I used peanuts)1 cup dark chocolate chips/ chunks2 tablespoons coconut oil

Instructions

Line a large baking sheet with parchment paper or a silicon mat.
In a bowl, mix together the yogurt, peanut butter, and chocolate chips until fully combined. Place piles of the yogurt onto the parchment paper, about 1/4- 1/3 of the mixture each. Spread is out into a circle that’s about 3 inches around. Place a popsicle stick halfway into each yogurt mixture, making sure that it’s in the center and covered on the top and bottom. Sprinkle on the nuts evenly.
Place in the freezer for at least 2 hours to harden.
Once hardened, prepare the chocolate coating by combining the chocolate and coconut oil and melting in the microwave in 20 second increments, stirring in between.
Dip the yogurt pops into the chocolate, working quickly as the chocolate will harden pretty fast. As needed, place back in the freezer to harden the chocolate (but this is likely unnecessary).
ENJOY! Store leftovers in an air tight container in the freezer.
