Ingredients
romaine lettuce – I used two head of romaine lettuce to form the base of this salad! Romaine provides the perfect crunch, but a mix of greens or baby spinach also works.
cherry tomatoes – add a juicy pop of flavor that balances out the savory meats and tangy dressing in this salad. Halving them keeps everything bite-sized and easy to eat.
red onion – adds a sharp, slightly sweet bite that brings a little zing to this salad. For a milder flavor, you can soak small red onion slices in cold water for a few minutes.
chickpeas – also called garbanzo beans and adds a boost of plant-based protein and fiber making this salad even more satisfying and filling.
cucumber – I used one English cucumber which adds freshness and extra crunch, helping to balance out the bold, savory ingredients.
roasted red peppers – adds a sweet, smoky flavor and subtle richness that really makes this salad pop!
salami – spicy salami really gives this pasta salad so much flavor. Feel free to use whatever salami or sausage you like best.
pepperoncini – these are key for that signature Italian grinder flavor! Adds a tanginess, a little bit of acidity, and just the right amount of brightness.
olives – I used sliced kalamata olives in this salad. You could also use black olives (or even green olives), if you prefer.
mozzarella balls – I used mozzarella cheese balls (also known as Bocconcini) that I sliced in half. You could also use mozzarella pearls or slices of mozzarella cut into pieces. You could also use shredded parmesan cheese or provolone cheese.
fresh basil – adds a slightly sweet and peppery flavor to this salad giving every bite a fresh, herby finish.
dressing – this easy homemade Italian vinaigrette is what makes this salad so delicious! Made with a combination of olive oil, red wine vinegar, parmesan cheese, garlic, dried oregano, basil and parsley. Adds so much flavor to every bite!
How to Make Italian Chopped Salad
Chop everything finely. The key to this salad is chopping everything into small, bite-sized pieces. This way you get a little bit of everything in each bite! Slice the tomatoes, cucumbers, red onion and mozzarella balls. Next, roughly chop the lettuce, roasted red peppers, salami, pepperoncini, olives and fresh basil. Try using this vegetable chopper to save on time and chop everything the same size.
Make the dressing. In a small bowl or glass jar, whisk together the olive oil, vinegar, parmesan cheese, dijon mustard, honey, garlic, dried herbs, salt and pepper. set aside until ready to use.
Assemble the salad. In a large bowl, combine all the ingredients for the salad. Drizzle the dressing over the salad and toss well until everything is evenly coated. Taste and season with additional salt and black pepper, as needed. Serve and ejoy!
