Margherita pizza stands out as the most widely available Italian dish abroad, followed by tiramisu and the spritz cocktail, according to the study “The Italian Table Abroad” presented by Italy’s Horeca association Fipe-Confcommercio. The findings underline the enduring global appeal and replicability of Italian culinary formats, particularly the pizzeria model.
According to Agroalimentare News magazine, the research, based on monitoring ten cities across seven European countries, examined 1,486 restaurant brands out of an estimated 8,960 active Italian dining establishments in the region. The analysis confirms that pizzerias are the most prevalent and easily replicated format internationally, with a total of 345 venues surveyed and an average price below the overall market mean.
London emerges as the city with the highest “authenticity index” for Italian cuisine, reflecting strong alignment with traditional Italian culinary identity. Meanwhile, Barcelona records the lowest average bill at €22, while Brussels ranks highest at €37.30. Across all ten cities analyzed—Paris, London, Barcelona, Vienna, Amsterdam, Brussels, Munich, Lyon, Berlin, and Marseille—the average price of a main course stands at €30.30.
The study draws on a wide dataset, including restaurant names, locations, formats, menus, prices, ratings, reviews, dishes, and ingredients. More than 115,000 menu items were analyzed, resulting in 49,152 semantic clusters—groupings of dish names and preparations sharing common characteristics.
Among dining formats, the osteria performs best in terms of “Value Index,” a metric that measures the relationship between perceived quality and price. This index goes beyond the cost of dining, focusing instead on the value customers feel they receive relative to what they pay.
A separate “Authenticity Index” evaluates how recognizably Italian a restaurant abroad is. This metric combines objective factors—such as menu composition, ingredient sourcing, naming conventions, and regional coherence—with perceptual elements derived from customer feedback and reviews.
